Galactooligosaccharides/SOS
Galactooligosaccharides (GOS) are functional oligosaccharides with natural properties. Their molecular structure is usually 1-7 galactose groups attached to a galactose or glucose molecule, i.e. Gal-(Gal)n-Glc/Gal (n is 0-6). In nature, trace amounts of GOS are found in animal milk, while human breast milk contains more, and the establishment of bifidobacterial flora in infants is heavily dependent on the GOS component in breast milk.

Oligogalactose is relatively pure in sweetness, has a low calorific value (7.1 J/g), is 20% to 40% as sweet as sucrose and is extremely moisturising. It has a high thermal stability at neutral pH, and after heating at 100°C for 1h or 120°C for 30min, there is no decomposition of oligogalactose. Oligogalactose can be used in the processing of foodstuffs with special properties such as bread and pastry, as it will undergo a merad reaction when heated with protein.
